Still recovering from a hectic holiday season? Here’s a simple and nutritious mid-week meal your whole family will enjoy! Zucchini pasta with avocado pesto Recipe: 1) Prepare your zucchini pasta by slicing 2 large zucchinis into thin strips or by using a julienne peeler. Then cook in a large fry pan with olive oil for 3-5 minutes, until tender. 2) To make the avocado pesto, combine all ingredients: - 1 large ripe avocado, seed removed - ½ cup fresh basil leaves - 2 tbsp unsalted raw cashews or pine nuts - 3 tbsp fresh lemon juice - 2 cloves garlic, crushed - ½ tsp black pepper Then blend until smooth. Slowly adding 4-6 tbsp water to mixture until desired consistency is reached. 3) Toss zucchini pasta with avocado pesto and chopped tomatoes until well combined, season to taste. Serve topped with fresh basil leaves and parmesan cheese. Let’s talk Nutrimiromics and chrono-nutrition aka the effect our diet and micro RNA has on our genetic expression. Basically Nutrimiromics studies the influence of the diet on the modification of gene expression due to epigenetic processes related to microRNAs (miRNAs), which may affect the risk for the development of chronic diseases. miRNAs are a class of non-coding endogenous RNA molecules that are usually involved in post-transcriptional gene silencing by inducing mRNA degradation or translational repression by binding to a target messenger RNA. They can be controlled by environmental and dietary factors, particularly by isolated nutrients or bioactive compounds, indicating that diet manipulation may hold promise as a therapeutic approach in modulating the risk of chronic diseases. Particularly those with inflammation as a centerpiece. This also ties into chrono-Nutrition.
